Jose Manuel Carballido Ricardez
Jose Manuel was born in Oaxaca (Mexico) and he is the Director of the platform I+D Mezcal (R&D Mezcal) which experiments with the introduction of Mezcal into different culinary techniques combining cooking and mixology.
He is a professional cooker with more than 10 years of experience and has a degree from the Hoffman Cooking School in Barcelona (Spain).
He teaches the use of Mezcal, the diversity of agaves and the methods for its handicraft production. He has created the first Mezcal bar in Barcelona called « La Divina ». He organises Mezcal caterings, tastings and mixology courses.
